Analytical Data:
Alcohol level: 14.5% , pH: 3.44, Acid level: 5.8 g/l (as tartaric)

Approximate lifespan in a proper cellar: 8-10 years

Tasting notes: Dark in hue and almost opaque, it is fragrant and mineral on the nose while on the palate it is luxurious and oily, but also silky and with a long finish. This darkly coloured wine is reminiscent of jam and liquorish, over a smooth spicy and toasted background, which comes from The French oak barrels. Salmos. A present day wine that speaks to us of the past.

Winemaker's comments: Made by the Torres family and coming exclusively from our vineyards located in the municipalities of Porrera and Lloar, Salmos is a Priorat wine that manages to achieve an unparalleled balance between power and elegance.

Serving suggestions: Dishes of game and red meats (16-18ºC).

History: This Wine is a homage to the monks of the courageous carthusian order, who arrived in 'Priorat', in 1095, where they cultivated vines. In 1835 a violent crowd destroyed the work of a lifetime and sacked the monastery, events which later culminated in the auctioning of church lands known as the "Desamortización de Mendizábal". In 1996 the TorreS Family began work on the planting of vineyards on the slopes strewn with the hard, black slate-like "Licorella" stone.

Celeste Blue - Ribera del Duero - Crianza - 100% Tempranillo

Celeste Blue 2004

Grape varieties: Tinto Fino (Tempranillo)

Area: Valladolid, in the village of Fompedraza, near Peñafiel. The winery is located at 895 m. above sea level.

Vinification:

Number of days of skin contact: 3 weeks

Number of days of fermentation: One week

Type of fermentation: Stainless steel tanks, under controlled temperature.

Fermentation temperature: 28-30ºC

Length and type of aging: Aged in French and American oak for 12 months.

Analytical Data:
Alcohol level: 14.5% , pH: 3.83, Acid level: 5.0 g/l (as tartaric)

Approximate lifespan in a proper cellar: 8-10 years

Tasting notes: Intense blackberry colour. Spicy and intense nose, with liquorice and black pepper hints on a base of well ripened fruits (blackberry and cherry). On the palate, very fruity at first with ripened tannins, also persistent and full bodied.

Serving suggestions: Serve between 16-17 ºC. Owing to its fruity and tannic characteristics, this wine pairs well with a great variety of meat dishes including roasts and small game.

Alcohol level: 13.5% , pH: 3.66, Acid level: 4.85g/l (as tartaric)

Approximate lifespan in a proper cellar: 2-5 years

Tasting notes: Cherry red colour. Intense and flowery on the nose, with hints of red berries. A very pleasant entry to the palate with fine fruit sensations and gentle tannins.

Serving suggestions: Serve between 14 - 16ºC. Due to its tannin and fruit characteristics it is an ideal accompaniment to a large variety of meat recipes, including roasts.

Gran Sangre de Toro

Fermentation temperature: 30º C

Length and type of aging: Aged for 12 months in Nevers oak (20% new oak).

Technical data: Alcohol level: 13.5%, pH: 3.6, Acid level: Total acidity 5.2 grs/l (as tartaric)

Approximate lifespan in a proper cellar: 7 - 9 years.

Tasting notes: Intense colour, aromas of blackberry and redcurrant jam enriched with notes of spices, and a silky palate of elegant complexity. On the poorest soils, the ancient Garnacha and Cariñena vines find excellent growth conditions (highly limited production).

Serving suggestions: Ideal served at 18ºC/65ºF with stuffed peppers, game, casseroles, stews and spicy meat
dishes.

Tasting notes: Ever since its early days this wine has offered jammy aromas over a toasty background and elegant density.

Serving suggestions: The perfect accompaniment to starters (cured meats, vegetable rice dishes and paellas), as well as the finest meat and games recipes, without forgetting cheeses. Serve at 17ºC. Properly cellared it will
improve over the next 10 years.

Approximate lifespan in a proper cellar: 2 years

Tasting notes: Clear pale yellow colour. The first impression is seductive, with well defined, rich primary aromas of perfumed moscatel grapes. On the nose it is subtle and floral (honeysuckle), with savoury fruit hints (ripe pears, custard apples) and sweet spices (vanillin sugar). On the palate it is both fresh and lively, with an aromatic fullness that finishes with nuances of cinnamon and cloves.

Serving suggestions: Superb with seafood cocktails, fish, melon with ham and patés. Serve at 11ºC.

Tempranillo contributes strawberry and rose aromas while cabernet sauvignon adds black pepper and cassis flavors to this blend, its firm tannins needing time or a steak to mellow.

Torres’ first-ever Spanish wine from outside Catalonia was made from purchased fruit at a newly acquired winery outside of Valladolid. The wine shows good color and nice plum and cherry character. It’s a bit tart and fresh for a 2003 (hot year), yet it carries some more rugged beef and smoke notes.
